Homemade sauerkraut :
Cabbage is one of the few, if not the only, natural ingredients where humans managed to increase nutritional properties, by using the pickling process. Through the processes of pickling cabbage, fermentation produces extremely active cobalamin (vitamin B12), which is normally found only in foods of animal origin (e.g. in prosciutto). For this reason, sauerkraut is a must food for vegans.
By the content of vitamin C, cabbage can be measured with lemons and oranges in (in 100 g of cabbage there is 50 mg of vitamin C). Sauerkraut contains a treasure component, pyridoxine (vitamin B6), without which the proteins would not be able to be used.Sauerkraut is also a source of niacin (vitamin B3), necessary for cell energy and overall metabolism including the brain, contains pantothenic acid (vitamin B5) and is necessary for cell energy and healthy hair color.
